Aquaculture

Established officially in 2001 as the Sydney Royal Aquaculture competition, the judging of seafood actually goes back as far as 1870 when the Bendigo Agricultural & Horticultural Society entered specimens of bream and cod into the Agricultural Society of NSW Show. Classes were also included for sea slugs (beche-de-mer or trepang) and isinglass – a gelatin from fish bladders.

From 1870 – 1914 only smoked , dried and preserved fish were exhibited, but today the competition includes cooked prawns, oysters, fresh fish, cured salmon/trout, caviar and other farmed aquaculture products from all over Australia.
